In the agricultural sector we aim very high 

The agricultural and livestock sector in San Giovanni Gemini and Cammarata,  boast a centuries-old tradition in the production of beef, sheep and goat meat. Thanks to the territory naturally predisposed to these activities, it allows the animals to graze in organically cultivated land, with pastures rich in plants and aromatic herbs, and at the same time to produce a very sweet milk and rare cheeses, now flagship among the cheeses in Sicily.
This method is not only valid for cattle,  but also for sheep and goats; in fact goats and milk lambs (6-10 kg) are highly sought after and appreciated especially during Christmas and Easter. But there is also the production of light (20-25 kg) and heavy (25-35 kg) lambs.
In recent years, numerous farms and livestock farms have been transformed into dairies in line with new technologies in compliance with health and hygiene and community standards, while maintaining the particularity and genuineness of the products to better meet the needs of the market.

The classic that enchants everyone

Caciocavallo and provola are Sicilian cheeses of ancient tradition, loved for their quality and versatility in the kitchen. They are made exclusively with whole cow's milk, coming from local farms that follow strict quality standards. The animals are fed fresh grass and graze freely, thus contributing to the richness and goodness of the milk used in production.

Caciocavallo, with its characteristic rectangular profile, is a cheese that can be enjoyed both fresh and matured. Its maturation varies from a minimum of two months up to several years, giving the cheese a taste that ranges from sweet and delicate to spicy and intense. The caciocavallo paste is compact and its color can vary from white to straw yellow, depending on the maturation period.

Provola, on the other hand, takes on a pear shape and is appreciated for its stringy and soft consistency. Provola can also be eaten fresh or seasoned, offering a wide range of flavours, from the most delicate to the tastiest. Its typical color is an intense straw yellow.

Both cheeses, caciocavallo and provola, are the protagonist ingredients of many traditional Sicilian dishes. They are perfect for enriching pizzas, sandwiches, salads and pasta preparations. Furthermore, they are excellent to enjoy alone or accompanied by honey, jams or local cured meats, for a unique and authentic tasting experience.

History:

Typical cheese that came out on religious holidays such as Corpus Domini. On that occasion, the brotherhoods carried their patron saint in procession and the decorations with the Ainuzzi were wasted. The cheese at the end of the celebrations was distributed to the poor and the faithful to be consumed.

What are:

They are figurative caci whose name probably derives from "fallow deer" as they had a similar shape or from the Greek aix aiggos which means goat.
Small stretched curd cheeses made with bovine milk in the shape of deer, fallow deer, goats, etc., with a thin straw yellow colored rind with a soft and compact consistency, weighing about 100-200 grams.

How are they made:

The milk from two consecutive milks is heated to a temperature of 37 ° and added with lamb rennet. The rennet curd undergoes a break with the “rotula”, a typical wooden tool, the size of a grain of corn. Hot water at 65-70 ° is added to the boiler, then the paste remains under the whey. When the temperature drops to 30 °, it is extracted and placed on sink tables, covered with sheets, where it remains for 24 hours. At the end of the acidification phase, the dough is spun and formed. Salting in brine.

Best in Sicily

We are talking about the Mangiapane dairy, winner of the "Best in Sicily 2015" for being indicated as  best cheese producer in Sicily. The prize conceived by the editorial staff of  Chronicles of Taste  it is awarded to the fine food and wine specialties of Sicily and to its best protagonists. The Oscar for this eighth edition is won by the products of the dairy company of the Sicani Mountains which for years has been dedicated to cattle and sheep breeding and to the production of cow cheeses. Especially well known is the caciocavallo prepared only with milk from  Modicane cows, the best that can be found together with fresh or seasoned caciotta and the particular ricotta.

This cheese stands out for its compact texture, white or slightly straw-coloured. Its flavor is aromatic and savory, which recalls the characteristic elements of milk. The consistency of the dough is compact and elastic, while the crust is thin.

It is a fresh table cheese, slightly salty, ideal to be consumed approximately 10 days after production. Sometimes, it is flavored with black peppercorns, adding a touch of spiciness to its delicacy.

FIRST SALT

Ricotta is a delicious dairy product obtained by heating the residual whey resulting from the processing of sheep and cow's milk. This delicious cheese stands out for its creamy and soft texture, with a color that varies from white to ivory. The truncated cone shape of the ricotta is due to the traditional container in which it is contained during the production process.

The flavor of ricotta is sweet and its aroma recalls the characteristic notes of the whey. It can be consumed fresh, immediately after production, or subjected to a light salting and maturation process for up to 2 months, on wooden boards. Furthermore, it is possible to enjoy it in the baked version, where it is cooked on terracotta plates in a wood-fired oven, giving it a more compact consistency and a slightly toasted flavour.

RICOTTA CHEESE

Canestrato is a hard cheese, produced with whole raw cow's and/or sheep's milk. It has a cylindrical shape with flat and slightly concave faces. The rind is thin and wrinkled, ocher in colour. The paste is straw yellow in colour. The flavor varies depending on the seasoning, from sweet to spicy and fragrant. Depending on the maturation phase, it is called fresh tuma, primo sale, Secondo Sale and seasoned. Canestrato is prized for its hard texture and is used as a table cheese or grated on dishes.

CANESTRATO

Pecorino is a hard cheese, produced exclusively with whole milk from pasture-raised sheep. The artisanal processing allows us to preserve and enhance the aromas and flavors derived from the local pastures. The paste is compact and granular, of an intense yellow colour, while the rind is thick. Pecorino stands out for its characteristic, spicy and tasty flavour. It is a versatile cheese, used both as a table cheese and for grating, and is a fundamental ingredient in the delicious dishes of Sicilian cuisine.

Among the best in the world

The most prestigious cheese event in the world was held at the International Convention Center Wales in Newport - Wales on Wednesday 2 November 22. This year was the 34th edition and saw more registrations than ever with a record 4,434 cheeses presented by 42 countries and 900 companies from all over the world . The 250 experts from 38 different countries studied its appearance, texture, aroma and flavor. Among all these exceptional cheeses, Fior di Pepe was also awarded, again from the Giambrone farm . Go to the site.
